It's courgette season

Courgettes are coming thick and fast now and are a great addition to pasta sauces. I'm freezing plenty of bags of sauce and lasagne/vegetable layer bakes. They'll be lovely through the colder months when the heatwave summer is a distant memory. Aren't the vivid purple potatoes pretty. They don't lose their colour when cooked and make spectacular chips.

  1. Oh, they're potatoes, I thought they were aubergines! How lovely that they retain their colour when cooked.

Do you ever make courgette bread/cake? That might be freezable as well. I can't say what the cake would be like as I've only seen recipes from a safe distance.
