I've been making soup this morning with veg from my garden. I have loads of carrot thinnings which have more leaf than carrot so I've used all the greenery too. Likewise my celeriac tops have gone into the soup. What a crying shame it would have been to waste all that lovely nutritious greenery. I only used about a third of the celeriac greenery as it can be a little bitter if you use too much. If I'd given it any thought beforehand I'd have dried the rest in my dehydrator as it makes a great addition to soups and stews. Next time I harvest a celeriac I'll dry any unused leafy top and stalk.
