Last night I set to and made two huge pans of bone broth using marrow bones that I bought from a local butcher. It's simmered all night and I've just bottled the first batch. I put the bones back on and covered them with water again. They will make a second batch before I discard them. I could make a third batch using the same bones but I don't have much storage space in my freezer and I can always get more bones if I need any. The smell of the star anise was gorgeous last night and the kitchen was toastie warm though a bit damp with condensation this morning. The broth is going to make the most wonderfully nourishing soups, stews and gravies.
I'll use the fat that settles on top to fry meat and veggies too so it's an added bonus that's filled with nutrition. It's a bit time consuming to make but keeps for up to six months in the freezer. We'll be glad of it in the middle of winter.
