I decided to have the big cooking session this morning and have just stopped for a rest. I'd bought a kilo each of diced steak and steak mince yesterday. I've put 200g of the raw mince in the freezer for another day. The rest I have cooked and turned into a kind of hotpot, a cottage pie and three portions of chilli. Each portion of chilli is plenty big enough for two people and the hotpot and cottage pie are big so there's plenty for two people to eat two days in a row with maybe some green beans or steamed cauliflower. The potatoes on top of the hotpot aren't actually as yellow as that. I added turmeric to the cooking water. I am trying to have a lot of turmeric and black pepper in my diet as it's supposed to help with arthritis. I finely grated some good strong cheese on top of both the hotpot and cottage pie for a bit more flavour and calcium. As soon as they have cooled down I will wrap the dishes in foil and pop them in the freezer. It's nice to have some meals ready to just pop in the oven for days when I don't feel like cooking
Once I got all the washing up done I set to again and currently have a huge pan of diced steak and vegetables simmering away. I plan to make a meat and veg pie tomorrow with one third of it. Another third will make a beef and veggie curry and then the final third Tony and I will have with mashed potato, steamed veg and Yorkshire puds tonight. The gravy is already tasting gorgeous and it will be lovely by this evening after it's had chance to simmer long and slow

DeleteOh wow! You are such an excellent cook! My mom used to make Yorkshire pudding for her dinner parties. It was always so festive and impressive. I like to prepare hot meals in ad advance, too. All you have to do is just heat them up and serve.

DeleteYour cooking time will pay off on the nights you just don't wan tto bother. I felt like that this week, when I had a frozen spaghetti bake one night, and apple sausage cheddar meatballs another.

DeleteWell done & although I'm not quite that industrious, I use my crockpot (slow cooker)to make a batch of casserole or some other thing which then covers several mealtimes. You've just jogged my memory to grab out the mince from freezer & make some scotch eggs. Forgotten that, so thanks. Take care, stay safe & huggles.

I agree that sometimes we just can't face cooking a proper meal and its wonderful to pop something in the oven to heat up with little effort involved. I bet you are knackered tonight Cherie! I lost my Google/Blogger account for a while but think I have managed to retrieve it. How is your hip these days? As you don't mention it any more, I'm hoping that you are now fully recovered.
ReplyDeletehi Hazel. The hip is absolutely fine but sadly the leg will never feel normal.. I've learned to live with it but it's a blimmin nuisance.
