Bottling the Kombucha

Some of the last batch of rosehip syrup that I made had set into a thick jelly so I've melted it down and added some elderberry syrup to the pan too. I added some extra water to thin it out and a little bit more sugar. I now have a bottle of rosehip and elderberry syrup for the store cupboard. Then I set to and bottled some of the Kombucha that I have been brewing.  I had never tasted Kombucha before I started brewing it but keep reading about the health benefits. It has a slightly vinegary but not unpleasantly so taste and I have added pineapple chunks to some of it and elderberry syrup to another bottle.  I have to leave it for a few days to build up carbonation and then put it in the fridge where it will keep for ages.  It will be interesting to see which fruits flavour it well. At some point I want to try some with mango as I love the taste of mangoes. Lunch was a cheese, lettuce, tomato and sauerkraut sandwich. I can almost feel those good healthy gut bacteria doing me good :-) Now I need to go online and source some bottles for bottling the next batch of Kombucha. It's a worthwhile investment and they will be used over and over again.
