In our 'Christmas Drinks Cabinet' we had what we thought was sloe gin in a glass decanter. (I need to label them) It must be three years old at least. Turns out to be cherry gin. I have decanted the cherry gin into another glass decanter and made a simple sugar syrup. I added the gin infused cherries to the sugar syrup and cooked them for a few minutes. I have put them into a large jar and they are cooling on the kitchen worktop as I speak. The sugar syrup will absorb some of the cherry gin flavour and the cherries will be sweeter because of the syrup.... They are very moreish and not the slightest bit mushy. If I can leave them alone they will be lovely in a week or two. I am thinking of serving them with good ice cream. The syrup will go into cocktails...….
