This is an experiment to see if it will keep in my fridge. I had made the elderflower cordial but it seemed such a waste to just throw the lemons and elderflowers away. I added about one and a half pints of water to the pan and simply simmered it for about half an hour. I left it to stand for twenty four hours then strained the solution into a clean pan. I discarded the elderflowers but cut the lemon slices into little pieces. I added about a pound of sugar to the pan and brought it to a boil. Then I turned it down and simmered it for a while until I reached a nice firm set. I have bottled it into some pretty little jars that I sterilised. It is a beautiful golden colour and really tastes like elderflower and lemon (what else could it taste like)?
One day, when we move house, I shall choose an older property that has a nice cool pantry. I have visions of dried fruits and jars of preserves on pretty lace edged shelves... one day soon I hope.
