Every year I buy a small bucket of honey and I add a large quantity of it to my elderberry tonic. Usually the honey comes from Poland but this year I bought Welsh honey from a company called Beelong Apiaries in Wales. Oh my goodness it's the nicest honey I've ever tasted. It's sweet and delicate without being at all sickly or cloying. I'll be buying from this company from now on
