Apologies if you read this before I've finished typing. I have to upload and then edit each time I get a signal on my phone. If I don't do this I lose everything that I've typed.
Tea tonight was absolutely delicious. I wrapped a couple of chicken thighs in chorizo and then wrapped them in bacon and roasted them in the mini oven. I made a three veg mash using a celeriac fresh picked from my garden with a potato and chunk of swede. It was cooked then mashed with plenty of butter. The cooking juices from the chicken thighs made a gorgeous sauce with a good splash of water, a quarter of a vegetable stock cube and plenty of freshly ground black pepper. I thickened it with some double cream and then popped the cooked chicken into the pan and let it simmer gently for about five minutes. I served it with some steamed sprout shoots. If you've never eaten leaves and shoots from Brussels sprouts freshly picked from your garden then you are missing a treat.
To use the mini oven economically I cooked five chicken thighs. We had one each sliced into a mini baguette for lunch. The fifth one is sitting in the fridge in case we get an attack of the munchies later on.
That sounds soooo delicious. I've never thought of mixing mashes. I'll keep it in mind.
