Lovely low carb breakfast

 My Yorkshire pudding tins are being put to very good use lately. This  morning  I layered some bacon into the tins and popped them under the grill for ten minutes while I beat a couple of eggs with a dash of cream. Then I poured the eggs on top of the cooked bacon and grated a little bit of mature cheddar onto them. I added some halved plum tomatoes and popped it all back under the grill for five minutes until the eggs were set. It was really tasty and very filling.


Tony has dropped me off at work and I have a little while to wait before the exam starts. I hope to catch up on a few blogs while I wait.

    1. They are the perfect size to fit into a bun too and would be nice cold.
