Bargain leek and pasta bake

Yesterday I pulled a couple of leeks from the garden and trimmed and cleaned them up before slicing into chunks. I've just cooked them in the same pan with some spaghetti to make a leek and pasta bake.  I would normally use pasta shapes but the cheap spaghetti is what was staring at me in the cupboard.  Once cooked I stirred  my bargain tub of Philadelphia into the pasta and leeks to make a creamy garlic and herb sauce.


 I greased an oven dish and poured everything into the dish before topping it with some breadcrumbs and grated cheese.  The crumbs were an old slice of bread or two that I'd turned into crumbs and frozen some time ago. The cheese was less than the size of a matchbox but once grated went a long way. 


I'll pop it in the fridge when it's cooled down and cook it on Thursday. I'm a bit of a plonker actually as I'd intended it for tomorrow. I had forgotten that we are going to our friends for tea tomorrow.  duhhhhh!!!!! Oh well that's tea for Thursday and Friday sorted.  We are having the remains of yesterday's pork casserole tonight. I'll stir some spicy sauce into it and make it into  a curry. It's carving club tonight so I want a quick and easy tea.

  1. In Minnesota that's called a hotdish, which I'm always a fan of. That looks delicious and two meals sorted is a win.

  2. Sounds a great way to use up those bargain bits and your produce from the garden. I do a lot of 2 from one meal and as there are only the two of us, it means the odd night off from starting from scratch. Ours will be pulled pork tonight from the crockpot with seconds for the weekend. We've a coffee & cake run with our car club this afternoon & it's frosty & sunny this morning so should be a nice day.     1. I loved pulled pork. Do you have a nice recipe to share? Now that I've read 'coffee and cake' I fancy a slice of coffee cake... It's only 6.30am :-)
