Pear sponge

Last week I was able to collect nearly 8kg of pears free of charge. They are windfalls so some of them have had brown bits on. That's no big deal to us we simply cut off the nasty bits and eat the good bit.  This morning I noticed a couple of large pears needed using up quite quickly so I have made a pear sponge.  It's just an ordinary cake batter with the sliced pears pushed in before cooking.  I scattered the mix with cinnamon sugar before popping it into the oven. It smells absolutely gorgeous and most definitely counts as one of my five a day... Well that's what I am telling myself  :-) It will go down very nicely with some custard for dessert this evening.
