Home made Sauerkraut

Tony and I have decided to drastically cut back on the amount of carbs we eat for the next three weeks to see if it makes much difference to our waistlines. We eat heckuva lot of pasta and rice so I decided to give cauliflower rice a try. I bought a couple of beautiful fresh ones at the weekend and have just made my first ever cauliflower rice. I've frozen three tubs for other days and then used some to make an egg fried 'rice'. It was absolutely flipping yummy and I won't miss the genuine article at all. I fried a finely chopped onion and then chucked in the cauliflower rice.  When it was nicely cooked I cracked a couple of eggs into the edge of the pan and when they had cooked stirred them through the 'rice' and onions. To add a bit more veg I poured a small tin of sweetcorn into the mix and gently warmed it through.  I have just had a bowl of it for lunch and it was absolutely delicious as it was but I have put a large bowl of it in the fridge for tomorrow. I will stir fry some chicken and vegetables then chuck the 'rice' in and once it has warmed through we can have that for our evening meal. 


I have fancied trying to make Sauerkraut for many years and never got around to it but this morning I used the softer leaves from the cauli and some white cabbage to make a small jar. It's supposed to be very good for the gut but as I have never even tried it before I have no idea how it's supposed to taste. Not a problem, we'll either love it or hate it and if we like it I will make a big batch to put away in the store cupboard.

  1. The cauliflower rice looks and sounds delicious, I may well give that a try myself. We could both do with cutting back on a few carbs.

  2. Another low carb alternative is butternut squash lasagne. Replace the sheet pasta with thin slices of butternut squash. It's delicious. There is a recipe on the net for cauliflower rice pizza base. I regularly make cauliflower rice but I've never made the pizza base myself but it has good reviews.

    1. Both those carb alternatives sound really nice. I have opened my eyes to how many carb switches we can make without losing out on flavour.

    1. I am not sure about the sauerkraut but I will leave it a couple of weeks and see what I think. It will be really useful in my store cupboard if we like it
