Cake and coffee

This morning I made up a batch of cake mix in the usual way. Normally I would simply pop the bowl straight into microwave and scoop it out to serve with custard.  This morning I decided to put it into one of my silicone cake thingies and treat it like a muffin.. I wish I had thought to put a paper liner in.. next time I will. But it tasted gorgeous if a little crumbly. I will knock ten or fifteen seconds off the cooking time when I make some more.  It would easily make six cupcakes.


I weighed my egg and it weighed 65 grams.  I always weigh the egg and use that weight as a guide when adding butter sugar and flour. I like to sift the flour in to add a little extra lightness.

Cream 65 grams each of butter and sugar into a bowl.  Crack the egg into the mix and add 65 grams of self raising flour.  I grated half a carrot into the mix just to add a bit of veg.. it could just as easily have been beetroot or courgette or you might even just leave it out.  I divided the mix into five cake moulds and then cooked them in the microwave for two minutes.  next time I will cook them for one minute and forty five seconds.

  2. Looks delicious, especially with whipped cream. (Cream of any kind is my downfall.) I've only ever microwaved one recipe. It was for chocolate cake and I made it in a square glass dish. Should have used a round dish - it was hard as a rock in the four corners and barely done in the middle! I didn't realize you could microwave the silicone molds - good to know.
