Heckuva storm last night

Tony and I sat on our bed and watched the lightning light up the sky in an almighty show of power. It went on for absolutely ages too and was really quite dramatic.  After all the lovely weather would you believe that the day of the Cleveland Show has arrived and the weather has been truly awful. There were a few hours of sunshine this afternoon but I feel so sorry for the organisers as they just would not have had the footfall that they hoped for.
We have some friends coming over for a social evening tonight so I have had a bit of a cooking session.  I really should invite people over more often as Tony has vacuumed the house from top to bottom.  I'm only doing a simple roast chicken with salad and a few nibbles. nothing flash and nothing that took a great deal of prep. I spatchcocked the chicken and it cut the cooking time virtually in half.. I will do this every time I roast one from now on. We saw the method on a TV programme the other day and it was so easy to do. It makes it a viable option for a quick midweek roast dinner.

  1. Your dinner sounds perfect. Just about everybody loves roast chicken with salad and nibbles. I haven't seen a lightning storm in years. We used to have them often when I lived in Santa Fe, New Mexico.

  2. That's it, I'll have to do that to the next chicken. Makes sense because all of the chicken gets cooked together when its flatter.
    We haven't had the storm, just very windy and lots of lovely rain.

  3. We have had a bit of rain but we need so much more. Grass is completely brown.
