I've been pickling baby beets today and I wondered whether I could pickle the stalks as it seemed an awful shame to waste them. I do like them stir fried usually but we're having liver for tea and seeing as how Tony is cooking it I didn't want to give him to much to stress about. A quick Google search was all it took. I now have a jar of beetroot and cucumber pickling and a jar of beetroot stalks and cucumber pickling. I'm looking forward to taste testing them in a couple of weeks.
You can also steam beetroot stems along with their leaves which tastes similar to spinach.

DeleteI have pickled beetroot before but never the stems. I will give that a try when I next get the pickling urge.
