I've just cooked the most delicious stir fry for tea. Most of the veg fresh from my garden. I'd been told about cooking cucumber and as I was given a lovely one the other day I thought I'd give it a try. I was amazed at how tasty it was and I'll be doing that often once mine start producing decent sized ones. We had kale,onions,cucumber, courgette, petit pois and radish. I fried them all in a mixture of olive oil and butter then tossed in some cooked chicken. When it was all nicely cooked I chucked in some cooked rice noodles. It was reasonably low carb and utterly delicious.

DeleteMy Mother used to stuff cukes when they got big... scooping out all those big hard seeds.. just like stuffed peppers... and I have has a cool cream soup using cucumbers and it was delish!!
