Vegetables en croute

 Or veggie pie to me. We have friends coming for tea and Bren is a vegetarian so I'm cooking veggie today. I've taken a pack of puff pastry out of the freezer and cooked a gorgeous vegetable casserole using garden veg. I'll let it cool and pile it onto the pastry like a giant pasty before cooking for 40 minutes. I'm serving it with a mildly spiced rice and lentils.  Not low carb but very tasty. Apologies if I've not commented lately.  The signal is hit and miss... but you do know that I read all your posts as and when I can.

  2. Sounds delicious! I have never tried puff pastry. It sounds convenient.
