After my mammoth tomato processing afternoon I now have four large containers of passata and my first ever tomato powder. The tomato powder is a real revelation and I was a bit sceptical as to how it would taste. Using nothing more than the skins and pips I have made the most intensely flavoured powder. I dehydrated it until it felt dry and crisp. Then I used my blender to turn it into a course powder and to be absolutely certain that it was bone dry I popped it in the oven on 150 for ten minutes. When it had cooled completely I put it back into the blender and turned it into a fairly fine powder. Oh my goodness it is delicious and I'll do this from now on each time I process tomatoes.
Sounds like you have made something delicious from something that would have otherwise gone to waste or the compost pile. :)
ReplyDeleteI'd seen it done before but thought it a bit of a faff. It was a faff but well worth doing. I think I'd only do this if I was already using the oven though as it wouldn't be worth putting the oven on to make it.

I will make a gorgeous seasoning for savoury things. I can use it like salt on chips and suchlike, stir it into soups and batters and sprinkle it over roasting potatoes. A little will go a long way.
