It's pickling season

I've  just pickled another batch of beetroot for my store cupboard and nipped over the road and left  a jar on my neighbours doorstep. I know she likes beetroot so it'll be a nice treat for her when she opens the door. I've been nibbling bits of beetroot for the past hour and it's absolutely gorgeous even before pickling. I want to pop out into the garden and see if I have any more of a decent size and I'll get another couple of jars laid down for winter. The garden is really going to into overdrive right now and the harvest is coming thick and fast.  I'm delighted at just how much an ordinary suburban garden is able to produce.

Oh! and I'm thrilled to bits to see that I have hit the million views mark on my blog so it's a bit of a milestone for me.

They can ripen slowly over the next few months.

  1. Do you pressure can or will the pickled beets stay like you have them in jars? My daughter has beets growing.

    1. The beets will be fine without pressure canning.

  2. I never took to picked beetroot, but I love pickled onions. We just don't go through enough to make it worth while. I bet you get the benefit though.

    1. I can't keep up with the tomato harvest at the moment as there are so many fruits ripening.
