Yesterday I cooked the most utterly delicious leg of lamb. I hadn't bought lamb in ages as it's just so darned expensive so it was a real treat. Tony cut little slits all over the leg and we stuck sprigs of rosemary and slivers of garlic into the slits. I served it with some roasted carrots, parsnips, potatoes, Jerusalem artichokes and sprouts. I usually steam the sprouts but this time I roasted them. I parboiled the potatoes, carrots and parsnip and then drained them and chucked them in the pan with a big chunk of butter that I had mashed with some freshly grated garlic. Just before I drained them I chucked the artichokes and a handful of frozen sprouts into the pan and and gave them a couple of minutes before I drained the water and added the garlicky butter.I transferred the veg to a couple of baking trays and cooked them till the spuds wee crispy and golden. There's plenty left for several more meals so it has worked out fairly economical but I certainly wouldn't have paid the full price for the lamb. It was half price in Tesco... with my club card.
Oh, that's great. Lamb is very expensive here, too, so I haven't bought it. I just made chicken enchiladas and Mexican rice. A whole chicken was only $1.99 a pound, and will provide several meals. The carcass is delicious in soups and broths, as well.

DeleteOohhh lamb is so my firm favourite meat (well I am welsh) and the meal you have cooked sounds divine. Just eaten but now your post is making me hungry again!

We've just had a repeat of it with Yorkshire puds.... and there's plenty left for a lamb Balti and a hearty soup.
