Tony and I went for a foraging walk today and were very disappointed to find that hardly anything was ripe. I did manage a few blackberries and elderberries but not enough of either to make syrup. I intend to have a look again this week in case the ones a bit closer to home are further on. We have some friends coming over for a bite to eat and social evening next weekend so I am going to be researching vegetarian recipes. Brenda is a veggie and we don't mind one bit eating a plant based meal but vegetarian cooking for entertaining isn't something I have done before. I'd appreciate any nice recipes if you have any. Last night we had a different set of friends over and I cooked a gorgeous beef casserole. Dessert was simply a bag of frozen raspberries whizzed up in my blender. I spooned a little pool of raspberry mush into the bottom of the glass bowls and topped them with Greek yogurt into which I had blitzed most of the remainder of the raspberries and a dash of double cream. A little swirl of raspberry mush finished it off nicely though the rasps were a bit on the tart side. A drizzle of honey would have sweetened them nicely.
We're changing things around in the garage and it looks a lot tidier. We moved the big fridge freezer and Tony will be making a shelf to put the dryer and small freezer underneath of. It will give us loads of space for storing my preserves and the basket of onions and garlic that I harvested recently.
Pity about the foraging & hope you find some soon. My friend Kate at "I live, I love" blog (on my sidebar) is vegetarian & may have some ideas for you. Happy entertaining & we may not even have Xmas to look forward to from what I'm hearing in the news. Garage cleanup sounds worthwhile. Take care & hugs.
ReplyDeleteOh dear, is it really getting bad out there? I must have a look at the news coming out of Oz and see what's going on. Numbers are really starting to creep back up here so I have no idea what the winter months are going to bring. Please stay safe Susan.
DeleteVegan or vegetarian? I would suggest a tapas evening. That way you can make lots of easy dishes and everyone is happy. Lidl do padron peppers, hallomi fries, bread, spanish meat selection, served with a spanish omelette and a vegetarian paella and aioli, a crispy salad on the side. Maybe some sweet potato wedges.

That's a brilliant idea. As a family we used to do 'foreign food night' once a month. We often did Greek, Italian, French or Spanish and even the music we played had to be in one of those languages. I may just have to reinstate that as it was great fun.

ReplyDeleteI can't suggest anything specifically but I reckon a sort of 'peasant' meal based on beans and lots of veg would be nice, maybe with crusty bread (sorry!) to mop up the juices.

My mouth is watering at the thought of crusty bread spread thickly with butter. We allow ourselves carbs of a weekend or I'd never be able to stick with the diet.

DeleteBeing a vegetarian myself, some of my favourites are mushroom and pea risotto, leek risotto (Nigel Slater's recipe is brilliant), Linda McCartney Red onion and rosemary sausages made into meatballs with a tomato/pepper/mushroom pasta sauce and pasta, Slimming World's Crustless Quiche and their chips. For pudding, how about Eton mess with meringue nests, quark and natural yogurt with a little honey to sweeten and berries, or a berry sauce swirled into the quark and yog mix. All of these are absolutely delicious!
