Rhubarb crumble.

 It's been lovely and warm today and I've spent pretty much all day working out in the veggie garden. It's starting to pick up nicely and this afternoon I was able to pick some decent sized radish to add to the weekly salad boxes.  They're all done and dusted and popped in the fridge ready for Tony to just pick one up before he heads out the door for work each morning.  I'm hoping that we have seen the end of the bitterly cold weather and things will gradually get warmer from now on. Have you had some decent weather today?  My next door neighbour gave me a big bunch of rhubarb so I will make a nice crumble with it for tomorrow's dessert. I'll make the crumble topping  with coconut flour and serve it with whipped cream rather than custard to keep the carbs down. I'll whip a drop or two of vanilla extract into the cream and we won't miss having custard at all.... well maybe a little bit but it's nice to be able to still eat dessert occasionally and know that it's all part of my diet.

    Your spring is so far ahead of ours. We won't see anything from the garden until late June - and can't even put seeds in until mid-June. We have to wait until after the last full moon in June because there can be frost at full moon, hard enough to kill anything tender.

    1. Spring feels late this year here but hopefully she has arrived and my garden can make a big start.

  2. I think cream (or yogurt) with a bit of vanilla and some stevia tastes surprisingly like custard and is very nice in its own right too.

  3. Yum Rhubarb crumble. Mum always used to make it in the spring. I'd opt for the custard though lol.

    We have a freeze warning tonight. Brrr. It's been pretty chilly the last few nights. I'm ready for things to warm up a bit. Our heating has been coming on.

  4. Oh, yum! I love rhubarb. That batch looks fabulous. What a nice neighbor. Mine is still growing, slowly but surely.

    1. I've been here nearly twenty years and she hardly spoke until recently. I think the offer of fresh veggies has maybe made a difference. Of course it might also be that since we took the big hedge down she has seen a lot more of me.
