Bones

I've been trying to source some beef bones so that I could make some bone broth.  Oh my word are they expensive these days and not easy to source. Thankfully Alexander spoke to a butcher at a farmers market and the gentleman is going to bring me some beef bones when next he is in the area. Alexander will collect them from the market stall for me and I'm chuffed to bits as he is only going to charge me £5 for 4kg. I asked for two lots and plan to roast them before putting them in our huge stock pan (that seldom gets used). I'll simmer them all day before straining off the beef broth.  I can use the bones three times to draw all the goodness out of them so it's an absolute bargain.  If anyone else is looking for bones for stock you might like to contact Shaw Meats. They are based in Aspatria Cumbria but visit farmers markets on different days. Alexander loves their charcuterie meats and says the sausage are lovely. I will be trying some next time they are in our area.
