Such a lovely day

After breakfast this morning Tony and I had a run out over to Scorton and back home via some stunning countryside.  The sun was out and it was lovely and warm driving along the country lanes. Have you noticed that the trees are turning green and lush. The sky looks so blue through the first leaves on the trees and it always lifts my spirits to see it..  After our big breakfast we weren't hungry at lunch time but when we popped over to visit our friends we both succumbed to a freshly baked apple and cinnamon scone.  Gawd knows how many carbs are in a scone but what the heck, it was lovely. When we got back we pottered around the garden a bit and I whizzed some frozen mixed berries into some yoghurt. It was just like a very refreshing ice cream and I will definitely be doing that again. It kept us going until tea time which was slow roast pork with tray baked celeriac, broccoli and onions. It was very tasty and filling and we haven't missed having potatoes at all.  I've just picked a huge mixed salad for Tony's lunch tomorrow and topped if off with a big chunk of roast pork and a dollop of mayonnaise. Tony loves a mixed salad and he's liking them even more now that mayo isn't off the menu. I think it will be an early night tonight as we are both absolutely shattered. I don't think my head will touch the pillow before I am asleep. Have you been anywhere nice this weekend?

  1. Sounds a lovely day & unlike ours which was cloudy, windy & with intermittent rain once again. Pottered about at home, raked leaves & toadstools (never seen so many in our front yard), along with removing a lot of perennial weeds from the lawn. Made a Cup of Tea cake (you read that right) and an Anzac slice, seeing it was Anzac Day yesterday. Have a good week, take care & hugs.

    1. Cup of tea cake? I'm intrigued. I'm currently researching Keto Cakes and desserts to make sure that we are allowed the occasional sweet treat. I hope the weather is a little better today for you. Are your winters harsh?
