It's bitterly cold outside and we have had a little bit of snow. I think it's forecast to flurry now and then for a couple of days so it's definitely a day for snuggling up by the fire and reading a good book. With that in mind I have just put a lovely pork and vegetable curry on to simmer. It's a great way to stretch a little bit of meat if you don't want too much meat in your diet or are struggling financially. I have used two pork shoulder steaks which I cut up into chunks. They are simmering with onions, carrots, a red pepper,a courgette, a small cubed potato and half a cup of red lentils. I used half a Knorr chicken stock cube, a cup of water and then once it had all cooked I stirred in a jar of Patak's Jalfrezi sauce. Now I will leave it to simmer slowly for an hour. I could have made the sauce myself but I love the Patak's range of sauces . One jar would easily serve six people if used the way I use it. B and M or home bargains are probably the best place to buy them but I bought mine with my Morrisons shop because they were on offer. I never pay full price for them but wait until they are cheap... they are always on offer somewhere.
Just the job. We are forecast heavy snow and minus temps for tomorrow, a rarity down here.

We don't get deep snow but every year we get a few days worth.

DeleteNot a big curry fan, but love delicious stews & casseroles and my slow cooker gets a good workout in winter, though I did use it yesterday for some pulled pork which will do us a couple of meals. Take care, stay safe & hugs. Love your new header picture!
