Healthy eating at last.

It was warm enough to wrap up and spend an hour and a half pottering in the garden today. That's a complete contrast to yesterdays weather when everything winter was thrown at us.I  am posting about it on my other blog so won't bore you with the details here. We are back on track with healthy eating and I picked some lovely fresh salad leaves from the garden today.I shredded them and mixed them in a bowl with a few cherry tomatoes and some sauerkraut.  I scattered some grated cheese into the bowl and bound it all together with a spoonful of mayonnaise.  Instead of having a sandwich made with two slices of bread we had an open sandwich. It was a really substantial lunch too so we both feel quite stuffed. I've lifted a hotpot out of the freezer and we'll have half of it served with green beans and sprouts for tea tonight. The other half we'll have for tea tomorrow with some veg leaves from the garden.

  1. Such a great idea to have an open sandwich and cut back on the bread. It looks so tasty...
