Just before heading out for my walk I picked up a tangerine to eat on the way. The skin was so fresh and fragrant that I grated the zest off it and mixed it with some sugar. When I got back I made a quick batch of chocolate orange cakes. They taste divine but I am putting them in a tub so that Tony can have them with his packed lunch. They are only tiny so he can have two or three and they'll be nice when he stops for a cuppa.
Along the lanes I'd love to wend, near Artist's Mews, on Writer's Bend. Where fragrant flowers of every hue sparkle in the morning dew. I wish I lived in Carver's Valley, Quilter's Creek or Cross Stitch Alley. Just think of all the things I'd make, if I lived by Crafters Lake.......... DeleteWeigh one egg. Now whatever the eggs weighs you need the same weight in butter, sugar and self raising flour (Or plain flour and baking powder). Give it all a good mix and divide into paper cases. I made twelve tiny ones with small paper cases. Next pop them in the microwave for slightly less than two minutes. It depends on the weight of the egg. Mine weighed fifty five grams so I cooked the cakes on high for one minute and forty five seconds. A bigger egg would need a few seconds more but not very many
I never think to use a really nice orange, clementine, or tangerine for zest in baking. Great ideas.
