It's hammering down outside.

It's the sort of day for snuggling up in front of the fire knitting. Last night I defrosted a kilo of boneless chicken thighs... They are such good value for money and have proven to be very juicy and tasty when I cooked them in the past.  I diced and gently fried one of them in butter with some spices. It was made into chicken and salad sandwiches for Tony's lunch today. I've made a chicken and stuffing layered bake for tea and I flattened the rest of the chicken thighs and rolled it up kind of like a swiss roll with some more stuffing. I stirred a finely chopped onion into the stuffing as I mixed it up just to add a little extra flavour. The 'swiss roll' will be cut into nice thick slices once it has cooked and cooled.  It will make tasty sandwiches for Tony next week. I think a salad just isn't enough when the weather is Baltic. When I put his overnight oats together I make sure to add rose hip syrup and elderberry syrup. I think he needs all the help he can get to stave off nasty bugs this weather. The mead that I started last month is still fermenting but tastes really nice. It will be lovely for Christmas. I need to move the bottles of raspberry Kombucha to the fridge now that it has had chance to ferment

We were complete porkers last night. I made the most glorious chocolate sponge and we poured some of Aldi's Caramel and hazelnut Baileys kind of drink all over it. It soaked straight into the sponge and was divine. I grated some plain chocolate into the sponge mix before microwaving it for two minutes.  Oh my word it was so nice. I'll certainly be making that again. It would make a lovely dessert if you are having friends over.  Do you remember those days?  Friends round for supper and several glasses of something nice.  I can't wait to do it again sometime next year.I hope the weather is nicer where you are right now.   1. It’s just cloudy in Japan, it’s getting cold, but not to the point we’re I need to get thermals out. Being back in hospital is boring. But at least I get to sleep and rest. Mum said it has been chucking it down and she hasn’t been able to get out, but I don’t think I would I want to at the current situation.
    At least here we can have normality to some point. But it must still be a never ending nightmare. In the Tokyo times they are saying the the uk is a Petri dish waiting to see if the vaccine works or if it will kill more. I am curious to see the outcome. I am not an anti Vaxer but I want more tests to be done

    1. I am concerned about the vaccine too. I have no idea what the answer is. I hope you are soon out of hospital. I hope it is nothing serious. . Take care of yourself and rest as much as possible

    2. I have EDS and I collapsed at work last week, so they are not sending me home so fast this time. I just miss my kids . They are not allowed to visit. Only hubby for 30 minutes a day . I have never felt so alone.

  2. Definitely time for warm homes and cosy environments. It's cleared up a bit here but we've had heavy rain and we've had heavy snow (nothing settled though). I've done that 'swiss roll' chicken thing in the past but by hammering a breast fillet out flat. It's really very tasty and I am grateful you have reminded me.

  3. It is freezing here....they call it a polar wind! Quite strange when there are blue skies and the sun is shinning but the wind is icy!! I expect to see snow on the mountain tops tomorrow. keep well Amanda x

  4. We woke up to a sprinkling of snow yesterday but it soon melted. The wind was still freezing but i was so busy I didn't have time to get cold. You definitely grave stodgy food this time of year.
