Well it's actually day two as I had some soup yesterday made from the stock left from the gammon but I shall start today.
Breakfast was delicious. I mashed one third of an avocado and spread it over two slices of toast. A slice of gammon was chopped into little pieces and scattered over the top. It was absolutely delicious. The avocados were 'wonky fruit' bought from morrisons. I got five huge avocados in a bag for a about £2.75 or thereabouts..
Tony will be having pasta salad for his packed lunch tomorrow. The radishes and tomatoes are from the garden and I chopped just over a third of the avocado to add to the salad. I cut a thick slice of gammon into small dice and added it to the salad. After cooking and draining the pasta I stirred in a generous teaspoon of mayonnaise. If you do it while it's still warm each piece gets coated nicely. Then I tossed the pasta into the salad and gave it a good mix. His breakfast will be a bowl of porridge oats and yoghurt sweetened with two teaspoons of elderberry syrup and half a mashed banana. I threw in a small handful of sultanas for extra fruit content. It's one of his favourite breakfasts to eat at work as it's filled with good stuff and reasonably filling.

We are having a lovely thick gammon, lentil and potato soup for tea with some home made crusty bread which I plan to have in the oven later today so that the house smells of fresh baked bread when he comes in from work. The soup was simplicity itself to make
There was about a litre of stock left from cooking the gammon. I didn't take the bay leaves or cloves out as they will continue to add flavour. I rinsed about a cup of lentils and chucked them into the broth with a washed and diced medium sized potato... I rarely peel spuds, it all adds to the fiber content. I added a large chopped courgette and a handful of chopped chives from the garden. When it was cooked I roughly mashed it with a potato masher and then added a tin of butterbeans and a vegetable stock cube. It simmered all afternoon and smelt absolutely delicious. I had a bowl for lunch. Then I decided to shred some gammon to add to the soup. It's developed all night so will be yummy when we have it for tea. There is enough to have tomorrow too and as we don't mind in the slightest eating the same thing two days in a row it means tea is sorted for tomorrow too.
If I remember correctly we used to have a soup/meal in liverpool as a child called peawack. Gammon liquor, lentils and peas. Delish.

DeleteThe gammon and avocado on toast looks delicious....I'd like a poached egg with it too. Gammons and chickens are such useful meats to stretch for lots of cheap meals.
