Beetroot

It didn't take me long to find something to do this morning.  I have just prepped some beets and set them off 'Lacto fermenting' (google it). I discarded the leaves as they were very wilted but kept the crisp stalks.  I cut them up small and have popped them into little tubs for the freezer.  They will be added to stir fries, soups and stews and will add extra vitamins and minerals.  Waste not want not has been my mantra for a very long time.

Beetroot, water and salt. That's it.. nothing more. Now we wait for the fermenting process

Keep the short stalks and give them a good wash

Cut them into small pieces and freeze them

  1. Well done. I got three limes in my £1.50 LDL veg box and made marmalade with them this morning. 😊

    1. I love the taste of lime but unfortunately it doesn't like me. I suffer terrible heartburn and crippling joint pain if eat them.

  2. Love the sound of lime marmalade. Cherie you are like me in so many ways, if something can be used rather than discarded then you do it.

  3. Beets are so beautiful. I love their reddish color. They are super healthy, too.
