I had a few things that needed using up from the fridge tonight so it was left overs for tea. I planned it yesterday as I needed to lift some mince from the freezer to defrost. When I buy a 500g pack of mince I immediately divide it into four portions.. Well obviously not immediately. I very clearly don't stand at the checkout dividing my mince into foil packets. I have found that 125g is absolutely stacks for Tony and I when mixed with veggies for pasta dishes. Tea tonight was 'Crispy Cones' with potato salad and coleslaw. We use lamb mince but really any variety would work so choose your particular favourite. Vegetarians could use veggie mince. I use kidney beans or chickpeas depending on what I have to hand
Serves two or three
3 Tortilla wraps cut into halves.. NB.One wrap per person is probably plenty but we were really hungry so had one and a half each.
125g mince of your choice
1 small onion finely chopped
1 tin of kidney beans or chickpeas.
As much chilli powder as you like
A pinch or two of salt
Small piece of cheese
Small handful of grated cheese
Baking tray
1) Dry fry the mince in a large frying pan until it loses its raw look.
2) Add the finely chopped onion and gently fry until everything is nicely cooked.
3) Add the drained and rinsed tin of beans and stir it all together
4) Sprinkle the chilli and the salt over the mix and stir gently...… now take it off the heat.
I usually prepare the cones while the mince and onion is frying.
Heat the oven to about 170
Take each tortilla half and turn it into a cone. Slice the cheese very thinly and place it between the overlapping join to act as a glue. It stops your cones unrolling and adds a bit of extra taste. Now put a little of the grated cheese into the bottom of each cone and put a couple of spoonfuls of the mince mix into the cone. Top with a little grated cheese and lay them on a baking tray. It will all start to tumble out so carefully push it back into the cone.
Bake in the oven for about ten minutes until the cheese starts to melt. The cones will crisp up nicely so if you want them extra crispy just leave them in the oven a bit longer but keep an eye on them so they don't burn. Serve them as they are or add a little side salad

That looks delicious. It's a very frugal meal, too.
ReplyDeleteYou could cook the cones until they are crispy without filling it with the other ingredients. When they are done simply fill it with a mixed salad and some grated cheese.
