The change in the weather has come as a bit of a shock. It rained on and off all day yesterday so I needed a coat and umbrella while walking. The temperature has dropped at least ten degrees and blue skies are proving to be a fleeting thing. I am back into wearing a warm lined, long sleeved top today and needed my coat again this morning when I was out walking. I had to use the walking stick for the first time in ages as my leg as been really troublesome today. It's not that it's hurting but simply very weak and prone to collapsing if I don't lock the knee. I'd hoped that it was getting past that point.
Yesterday I spotted a recipe for a marmalade cake on a blog so I made one. The recipe is Mrs Darlington's marmalade cake and oh my word it's gorgeous. I didn't read the recipe properly and mixed the sugar into the water/sultana and marmalade mix. I brought it to the boil and let it cool before adding flour and beaten eggs. I should have added the sugar at the flour and egg stage but it hasn't made a difference. The cake is moist and full of plump juicy sultanas and bits of orange peel from the marmalade. There are now six slices in the freezer and plenty in the cake tin for Tony and I to tuck into.
Whoops, your weather sounds more like ours now, though we haven't had rain for 2 days we do having a bitingly cold wind & only 2deg this morning. Hope the leg feels better soon. Cake sounds rather yummy. Take care, stay safe & huggles.
ReplyDeleteI turned the heating up, it was so chilly. Or maybe I am just soft and like my creature comforts.
ReplyDeleteThe marmalade cake sounds heavenly!
xx
I woke at 4 and went to the kitchen to make a cuppa. Looking outside I could see it was drizzling. But when I woke at 8 it was grey, windy and bone dry! I hope the tiny bit we had quenched a few plants thirst!
