Really simple tasty lunches

I could really get used to Tony being at home all day and am quite looking forward to him retiring in a couple of years. I find that we are eating proper lunches rather than grabbing a quick sandwich and we sit down at the table for a proper break.  I have been digging things out of the freezer to use up. The other day we had leek and potato soup and I made toast 'soldiers'.
Yesterday I sliced a punnet of baby plum tomatoes into halves and covered them with a load of freshly ground black pepper.  I finely chopped several cloves of garlic and tossed it into the tomatoes.  A good slosh of olive oil was added and then they were oven roasted for about forty minutes.  The kitchen smelled divine.  While they were cooking I made some really simple little wraps.. I put some wholemeal flour into a bowl with about half a teaspoon of baking powder.  Then I added enough plain yoghurt to bind it into  dough. I gave it a bit of a knead  and put it aside for a little while. Then I cut it into four pieces and rolled each one out really thinly on a well floured surface. I dry fried them in a hot frying pan and they puffed up beautifully. When they were cooked (I just eyeballed them) I made Tony and I the most heavenly cheese sandwiches. I added a good spoonful of the roast tomatoes and they were fabulous.  We are eating a heckuva lot of garlic just lately. Good job we are in lockdown.
After lunch I oven roasted some peppers and onions with loads of garlic and olive oil. When I got up this morning I cooked a pan of pasta and when I had drained it I tossed it into the roast peppers with a good spoonful of yesterdays roasted tomatoes.  I put them into my oven dish and broke up a couple of strong cheddar cheese slices.  I've scattered the cheese all over the pasta mix covered it with foil and put it in the fridge.  I'll pop it into the oven tonight while I am in the bath.  It will be gorgeous with a tossed salad.

Lunch today was just a simple one of scrambled eggs on toast but while the were cooking I stirred in some chives and a slice of cheese. The chives were fresh from the garden and warm from the sun

  1. All sounds delicious. Isn't it nice to take time and sit down together to eat, one of the things I love about retirement.

  2. They all sound delicious! If I'm up early I do the 3 meals a day but if I've managed to fast a bit or have slept in (anything after 8am is sleeping in for me) then I often just do brunch and supper.
    I have also been trying to use up a lot of odds & ends. Yesterday's lunch was soup and a plate of raw veg with hummus and today's was a plate of raw veg with guacamole and a glass of wine and then a cup of tea with a date square. Nice to be able to sit and enjoy it rather than gulping it down at the office!
    I envy you the tomatoes - I ran out a few days ago (although I do have plenty of tinned) but I am planning a shop very early tomorrow morning so will pick up some then.

  3. Our lunches are usually very simple, but today I pulled some homemade pumpkin soup from the freezer & we had it with crumpets. Being retired is definitely different to when we worked & am now missing being abe to just pop anywhere at anytime. Ooh, garlic, I'm allergic to it. Take care, stay safe and huggles.
