I really must thank Joy for posting the banana oat pancake recipe a while back. It has become a firm breakfast favourite. I've just made these and thoroughly enjoyed them. Since changing our dinner plates for much smaller ones, every meal looks enormous. Our old dinner plates now look absolutely huge and we can't believe that we used to fill the plates with food. Can I ask Joy what I can use instead of banana though. Tony doesn't like banana and I wondered if there is something else that would work just as well.
I always add a half teaspoon each of pumpkin, sunflower and flax seeds. The flax I grind in my pestle and mortar just to crack them a bit. I like to add a few sultanas to the mix too.
Wouldn't they make a lovely looking breakfast plate for someone who has been poorly. I do like food to look tempting. I bet strawberry slices would be pretty as they usually look like hearts when they are sliced.

They look delcious and, as like you I'm making an effort to eat more fruit, I will be sure to give his recipe a try. X
ReplyDeleteGoodness, I don't know. Could you try pureed apple - in America 'applesauce' seems to do almost everything.

I made some for Tony and he thoroughly enjoyed them. I mashed the banana really well. It seems it's the texture he doesn't like. I would have had them tomorrow if he didn't like them.
