Using up the leftovers

Tony went back to work this morning and I've been having a look through the cupboard checking things that are about to go out of date. I want to use up everything that is lurking in there before buying more groceries. Amongst many other things, there's loads of different cheeses in the fridge and I found a wrinkly red pepper and a few sheets of lasagne to use up. I fried a little bit of minced lamb and then chucked in a finely diced onion, the finely chopped wrinkly pepper,  a good handful of baby plum tomatoes and a tin of chopped tomatoes. I seasoned it well and it made a lovely pasta sauce. Then I made a quick cheese sauce using some of the quite strongly garlic flavoured cheese.  It's now a tasty lasagne for tea. It just needs popping in the oven to get all golden on top. I have about a third of a fat baguette waiting to be used up so I am planning on rubbing it with garlic, spreading it with butter and then wrapping it in foil to pop in the oven. It will be lovely with the lasagne.
There was plenty of the cheese sauce and the pasta sauce left so I quickly cooked some pasta and stirred it into the remaining pasta sauce.  I divided it into two portions, topped it with cheese sauce and tomorrow I will grate some cheese on top.  It has made Tony and I a lovely little pasta pot each to serve with some oven chips.  I won't be home until late tomorrow so a quick tea will be on the cards.

It's been blowing a hoolie  all day and I've dried a couple of lines of laundry. I've just brought it in to finish off on the radiators. When the heating comes on later tonight, the house will be filled with the lovely fresh air smell that you get from line dried laundry.

  1. I just love meals made up out all the leftovers. I have quite a bit of cheese left which I am going to turn into a spread for crackers or pieces of baguette.

  2. Wow that turned out nice! I am determined to use up more leftovers this year. I was doing better and then the holidays happened. It's time to get back on track and improve some more too!

  4. I love finding ways to make truly delicious meals out of bits and pieces that would otherwise get tossed out. Funny, I don't think my husband understands that at all! It's good to have people online who get it :)
