Along the lanes I'd love to wend, near Artist's Mews, on Writer's Bend. Where fragrant flowers of every hue sparkle in the morning dew. I wish I lived in Carver's Valley, Quilter's Creek or Cross Stitch Alley. Just think of all the things I'd make, if I lived by Crafters Lake.......... Very tasty stuffing
My friend shared her stuffing recipe with me and told me to adapt quantities however I wanted. For this bowl which is about the size of a small tea plate and about 2.4cms deep I used as follows
1 potato about the size of my fist.
2 smallish onions
Half a packet of Paxo sage and onion stuffing
2 pork sausages
1 mug of hot water
pinch of salt and pepper
Peel and chop the potato and one of the onions before putting them into a small pan with about a mugful of hot water. Add a pinch of salt and a good grind of black pepper and leave them to cook until tender. While they are cooking finely chop another small onion and skin the two sausages. Break the sausage meat into small pieces and fry the onion and sausage meat in a non stick pan with a little beef dripping.
When the potato/onion mix was cooked I simply added enough Paxo straight into the pan to make a nice firm stuffing. I gave it all a good mash and then added it to the sausage meat mix in the frying pan. Give it a gentle scrape to get all the sausage oniony yumminess from the bottom of the pan.
Then I baked it in a hot oven for 30 minutes.... It tastes divine and is intended to go into some chicken sandwiches later today. It's a great way to make two sausages go a long way
We are partying tonight so won't want a huge tea. I thought the chicken and stuffing buns would fill us up until food is served
