A tasty treat

Yesterday afternoon I made some yummy rhubarb and black cherry jellies... I have just had one with a scoop of ice cream for dessert.  It was so tasty and fresh and one of my 'five a day'. They are so simple to make

1 packet of black cherry jelly
3 sticks of rhubarb
about half a pint of water

Wash and trim the rhubarb before cutting into chunks. Place the rhubarb into a glass jug with a little splash of water and cook in the microwave oven until it is soft. Stir the black cherry jelly into the hot rhubarb.  When the jelly has melted and everything is nicely combined make it up to just less than a pint with cold water.  You can set it in a mould or pour it into four little dishes.  Perfect on its own but extra yum with custard  or ice cream… I bet it would be nice made into a trifle too. I have some more rhubarb in the freezer so will try it as a trifle and let you know what I think.

  3. Sounds delicious and would make such a nice change, I generally make pies and crumbles with rhubarb.
