Scotch Quail eggs

I have been a bit of a domestic goddess this morning. By 9am  I had made a dozen scotch eggs (J G eat your heart out)  using the quail eggs that I bought last week. I toasted two crusts from the end of a loaf of bread with the intention of putting them in the food blender.... it has died..  Out came a jug and rolling pin and I bashed the toasted crusts into crumbs. After boiling the little eggs for three minutes I cracked a hens egg into a bowl and set to work wrapping each little egg in sausage meat before dipping it into the egg and rolling it in the breadcrumbs. I much prefer my yolks firm when having scotch eggs.  I have fried the scotch eggs in vegetable oil and put them in the fridge. Tonight I will pop two each in the oven and bake them for tea. The rest I will keep for Friday when we have friends coming over.  I will spatchcock a chicken and put a buffet supper on the table. We can graze around the table all evening with a couple of glasses of wine.

    1. They taste absolutely gorgeous. Nothing at all like shop bought ones.. not even the nice gourmet ones can compete with these. I will certainly make them again

    When we kept quails I used to do pickled eggs, but I wish I had done scotch eggs now.

  3. Those are so cute! I have no idea where we would find a quail egg here, and would any pork sausage do or would you have to add seasoning?

    1. Any sausage would do. Season it to taste... I shall be experimenting with different sausages next year when pullet eggs are available very cheaply
