Elderflower cordial

It is elderflower cordial season.  I have a batch on the go and my kitchen smells absolutely divine. All along the hedgerow the elders are full of buds so I will make another batch in a few days.  While I was collecting the blossoms I had a chat with an older man who had just this past week planted a plum tree in the hedgerow.  It is in the far corner of a large green space bordering a little area of woodland where nobody goes... He is planning on planting a few hazelnut trees. I think I may plant an apricot there too.  Who knows, we may create a public orchard for anyone to pick from.



I am planning on making elderflower and lemon marmalade with the waste from my cordial making. I bottled it and it smells and tastes absolutely gorgeous.  I also plan on making a few more bottles of cordial
