Baking day

The weather is absolutely vile so I'm having a baking day. First  I cooked a pan full of apples and pears with some ground mixed spice and some freshly grated ginger. . The pears have disintegrated into a lovely sweet mush and the apples are tender chunks. I thickened the juice with a bit of cornflour and poured them into a large square casserole dish. I've chopped up a few dates and scattered them through the fruit. Then I made a ginger sponge and poured it over the fruit. I scattered sultanas on top of the sponge and it's cooking as I type.  The kitchen smells divine. Tony will be a happy hubby when he sees that he's getting cake for dessert.
